  • 1/2 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, granulated sugar, and brown sugar until combined.
  3. In another bowl, mix eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir until fully combined. Chill the dough for at least one hour in the refrigerator.
  5. Scoop tablespoon-sized portions of dough and roll into balls. Coat each ball in powdered sugar before placing them on the prepared baking sheets about two inches apart.
  6. Bake for 10-12 minutes until crinkled but still soft in the center.
